It’s a hot summer day and who wants to cook? Not me. Loaded Cauliflower-Leek Soup is served chilled and I would pair this lucious soup with your favorite toasted sandwich. I like it with a grilled Ruben sandwich with lots of swiss cheese, canned corned beef and sauerkraut. But then, I crave cheese like the cookie monster crazes Oreos… lol.
